For my very first dish i decided to go with a healthy yet filling dinner. I found this recipe on Pinterest and thought it looked pretty easy and like a great experiment for my whole family to try out. This is a “One Pan Mexican Quinoa.” I thought that a lot of people on health kicks would love this because quinoa is sort of the “in” food right now and is super good for you. This recipe can be prepared several different ways. You could make it into a lettuce wrap and simply put about three spoonfuls of the creation into a lettuce boat and eat it like that, or you could make it into a burrito and put it on a wheat tortilla, and lastly you could put it straight into a bowl and eat it just like that. I tried all three ways and found that i personally found it to be most satisfying just straight from a bowl with some salsa and shredded lettuce on top, but all three ways were a big hit from my family. Overall this was a delicious meal that i would definitely recommend to everyone looking for a hearty dinner and/or lunch packed with nutrients and protein! I didn’t realize this till after but i thought it would be quite delicious to add some ground turkey to the mixture. It only took about 30 minutes to cook and was super easy. A plus to this meal was that we had a lot of leftovers that could be heated up for lunch and tasted just as good, if not better the 3rd or 4th time around.
