Rainbow Roasted Vegitables

This week’s post is dedicated to that food we could all use a little more of in our lives! It’s the good ol’ veggies. Although you may not be craving them on a daily basis like you may be craving those donuts, they are so good for you! After you taste THESE rainbow veggies you may have a new craving to distract you from those bad eating habits. The vegetables used in this recipe were red bell peppers, carrots, yellow bell peppers, zucchini, broccoli florets, and last but not least red onions. You can add or get rid of any of the ingredients that you may not like. I think that red potatoes would be really good in this dish as long as you are not worried about the carbs. I love these because they are not only delicious but they look quite beautiful altogether. You may think it’s impossible to roast veggies without oil but think again! In the recipe it says you can use either balsamic vinegar, soy sauce, tamari, or lemon or lime juice as a substitute to oil. When i made them i used balsamic vinegar and it was to die for. My family loved these when i made them for dinner to accompany some chicken. This healthy veggie assortment was also super easy. It took about 30 minutes to make this magic happen. Cutting vegetables is one of my favorite things to do in the kitchen so i think there is a very big chance i will be making this often. If you have kids this is a fun way to get them to eat their veggies because they look so yummy and different from regular old boring vegetables. Blackberry Honey Walnut Salad

Hello! So this week i made something really simple and that is a little unlike me. Yes, i made a salad. I know i may seem like i am anti-salad based on my previous posts, but i actually do think salads are good i just don’t like being confined to them when on a health kick! Salads like these aren’t just boring old lettuce, this salad is fun and light yet still filling! You can eat this for lunch, snack and dinner. There are so many different flavors and textures that just explode in your mouth in every bite. This salad is sweet, tangy, crunchy, and smooth all at the same time. There is so much more than just lettuce to this salad. There are apples, blackberries, mangoes, cucumbers, bell peppers, and feta cheese. I added avocado because you can never go wrong with avocado. My food judges (my family) all approved! They aren’t usually salad fans but they all went back for seconds so that tells you something. Making this dish was super duper easy. It only took about 20 minutes. To cut back on time you can buy already honey roasted almonds, but in my opinion they taste 20 times better when you make them on your own. The dressing that goes perfectly with it is included with the recipe and you can make it depending on if you like it more tangy, or more sweet. I would definitely recommend this food for anyone looking for a quick easy and delectable meal. My one recommendation is to put te dressing on the salad right before you eat it so tat it doesn’t make the salad soggy if you have any left overs. Healthy Pizza

For this week i decided to go with a food that is loved by everyone who is anyone. I experimented with a cauliflower crust pizza. This dish is a great way to get that junk food satisfaction without it actually being too bad for you. I don’t know about you guys but carbs like pizza are my weakness, so when i found this wonderful substitute for my favorite food, it was the solution to all my problems. When i made this recipe i did a couple different flavors of pizza. I made a typical pepperoni pizza, a buffalo pizza, and a margarita pizza. This was a lot of fun because there are so many different twists you can add to it. My personal favorite was the regular pepperoni pizza because you can never go wrong with a nice slice of the good ol original. The process of making it was really fun and pretty easy. We, as a family, like to make a batch of cauliflower crust and then give each person their own personal pizza to make their own shapes and toppings. In total it probably took about about 30 to 40 minutes. I would definitely recommend this dish if you’re feeling like you wanna have some fun and get creative with your family and friends. Even just for a simple day by yourself. My family loved making this and eating it. Next time we are going to try even more flavors and varieties. Flourless Chocolate Muffins

For this week’s experiment i decided to go with a food that almost everybody loves! Which is chocolate muffins! However these muffins will not break the diet. You can take them on the go for breakfast, as a snack to take to work or school, and even as a little after dinner dessert. Not to mention, these muffins can be eaten by anyone, they are gluten free and even dairy free. Just to make you wanna try these muffins even more, they are only made of four simple ingredients. All you do is take your bananas, peanut butter, maple syrup, and cocoa powder and mix them all up in the blender. Then you simply put them in a baking pan, throw them in the oven and you are set! It took me about 20 minutes total for. I am definitely going to have to make these bad boys again. they were so moist and peanut buttery and chocolaty that you could stop yourself from eating way too many. Who needs a cheat meal when you can have foods like this to fill your cravings and are healthy at the same time. If you feel like adding a little crunch you can sprinkle crushed hazelnuts, as almonds on the stop of the muffins. My family and i ate them so fast because of how mouth watering they were. I would recommend this dish to anyone looking for a healthy alternative to foods that are not so healthy, or even maybe just heavy i the carbs. This recipe has no flour, no oil, and no refined sugar. Breakfast Egg Cups

This breakfast food will leave you wanting more! It is a super easy and great way to prepare your breakfast the night before, for those mornings when you have to run straight out the door. Not only is it delicious but it is nutritious! It is very high in protein which is the way that everyday should start off. I made these breakfast cups and put them in the fridge once they were all done baking and the next morning i put it into the microwave for about 30 seconds. My batch of eggs didn’t last long enough to be saved, but the website where i found this recipe says they can be saved in the refrigerator for about a week. These muffins give you that full satisfaction and are so delicious by themselves, or even with some salsa and avocado if you’re feeling fancy. In the recipe there is a list of what veggies to put int the mix, but you can add whatever else you want, like onions, mushrooms, and tomatoes. They are warm and flaky and full of flavor! My taste testers, aka my family, really enjoyed them! I am definitely going to make these bad boys again. I would recommend them to everyone and anyone, weather you are trying to eat healthy or not! The whole cooking process took me about 35 minutes, including the time that they were in the oven. You just whisk up some eggs, chop up some vegetables, and then toss them into a greased cup cake pan, throw them in the oven, and then your done. Chocolate Covered Banana and Greek Yogurt Blueberry Bark

Thats right you guessed it! Heres another pinterest inspired recipe that i have sampled for everyone out there trying to eat conscientiously. I first made bananas covered in chocolate and decided to include another easy snack since it was just too easy. In addition to the bananas i made a greek yogurt blueberry bark. They were both a delicious way to kick out that sweet tooth. With the bananas you can add any extra type of crunch like almonds, nuts or even sprinkles onto the the chocolate before you put it into the freezer. This took me about 10 minutes to make (not including the time in the freezer.) Since that was so easy i thought i could also make a nice little healthy snack bar. These were also a fool proof snack. However i think that next time i made them i would put almonds in with the greek yogurt because to me the blueberries weren’t as good when they were frozen. I would definitely recommend the chocolate covered banana to a friend and try to improve the yogurt bark before i suggested it to others. Lettuce Wrap Turkey Burger

This week I decided to make a lettuce wrap turkey burger. I was inspired to make this food while i was scrolling through my instagram and came across a mouth watering hamburger that i knew i needed to try. I didn’t see a recipe that went with it so i kinda just made my own thing and have fun with it. It turned out to be a huge success! My family and i loved it. It was super easy to make and i even added my own little flare by cooking an egg over easy and placing it on top of the burger. I started by cutting up half of a diced bell pepper, half of a diced onion, and a pouring in a ranch seasoning packet into the ground turkey and folding them all together. I then formed the meat into about 4 3 inch circles and put them in a pan on the stovetop. They cooked on one side for about 5 minutes and then i flipped them and repeated that until they were completely brown all the way through. While i did that, i made four eggs over easy to place on top of the burger. You could either put them on a sandwich thin or in a lettuce wrap. Add your condiments and your done! After everything was done it took me a total of about 30 minutes. This is a great protein packed meal for everyone, add a some sweet potato fries on the side to complete your healthy burger experience. I would highly recommend this for everyone to experiment with! Add your own little twist and have fun with it because there are so many options that you could do to make it your own.
